Breakfast is not only the most important meal of the day, it also happens to be my favorite meal of the day. I believe that the best foods are served in the early hours. And since I am not a morning person, I’ll take any excuse to make waking up easier, especially if it involves food. Waffles with syrup, french toast, frittatas, bagels, oatmeal, and the ever important pancakes. Coffee is pretty important, too. If you combine these two necessities and throw in some chocolate, you’ve got some jolty, jittery, mocha pancakes. Top them off with homemade mocha syrup and you’ve got gold.
The best part about these pancakes is that your coffee is already cooked into your breakfast. No need to drink it! But let’s be honest, you’re going to have a big cup anyway. You might even make a mocha to drink, which definitely would not be overkill.
