I am not much of a morning person and breakfast is my least favorite meal. Mike on the other hand LOVES breakfast food, so I’ve been trying to find recipes for ‘on the go’ breakfast meals that can be prepped the night before and just pop in the oven in the morning, get ready and it’s ready to pack up and run out the door for work/school. I’ve seen a lot of Pinterest recipes that use Pillsbury Biscuits in the pop open cans, so I thought, why not stuff the biscuits with breakfast ingredients prepped the night before and bake for a quick on the go breakfast! It’s easier to eat then a sandwich because all the fillings are inside the biscuit! I used the ingredients I already had in the fridge, you can use whatever meat/veggie combo you like or have handy.
